    84ChefChristopher Champagne Executive Chef / Owner

    Christopher Champagne grew up in Westerly and was a graduate of Johnson & Wales University in 2003 with an Associate's Degree in Culinary Arts. In 2004, he graduated with his second degree from Johnson & Wales University with a Bachelor's Degree in Food Service Entrepreneurship. Christopher's love and passion for food began at an early age. His father, Tom, was a Chef and General Manager at several local establishments. Dinner at the Champagne house was always an event and everyone helped. Christopher's aunt loves to tell the story about how at three years old, under the close supervision of his father, Christopher was standing on a foot stool at the kitchen counter chopping vegetables for dinner with a ten-inch Chef's knife. As part of an externship with Johnson & Wales, Christopher was able to work and travel through Europe. Shortly after graduating from school, Christopher left his long-standing position as General Manager at Mystic Pizza to pursue his dream to become an Executive Chef. During his first tenure as Executive Chef at Skipper's Dock in Stonington, Connecticut, Christopher took a two-week hiatus to intern at the infamous Blue Hill at Stone Farms under Chef Dan Barber, James Beard Award Winner of '2006 Best Chef New York City.' Shortly after returning from his internship, Christopher was approached to purchase the very popular 84 High Street, a long-standing restaurant in Westerly. The anticipation of owning his own restaurant was mounting and he quickly put his Entrepreneurship degree to work, raising the necessary funds for a down payment and working capital. In January 2013, 84 High Street re-located, under the new name of 84 Tavern on Canal, but is still owned and successfully managed by Executive Chef Chris Champagne.

    Amigos Logo

    Amigos Taqueria & Tequila has recently opened in the newly renovated restaurant space at 2 Canal St. in Downtown Westerly RI.   The space has had a complete overhaul and looks fantastic; complete with rustic wood floors, exposed brick, clean white walls, and tasteful Mexican décor. It even has an authentic Mexican Mercado selling hecho en Mexcio wares. The bar is spacious with a beautiful marble top that looks like petrified wood. It blends wonderfully with the reclaimed wood décor and bar back.

    This menu has something for everyone. All the salsas, guacamole and chips are handcrafted. Be sure to check out the Habanero Mango Wings, mini chimi's and the queso fundido is sure to delight.  Entrees include mexican favorites like molé, fajitas, tuna tostadas and fish tacos.  Don't forget to save room for handcrafted traditional mexican desserts.  Banquet room available.

    Codfish and PEI Mussel Potato Stew

    2- 6oz Cod Filets

    1 cup Panko Bread Crumbs

    2 Tbls Melted Butter

    1 cup finely chopped Parsley

    ½ tsp Garlic Powder

    Stew

    8 cups cleaned Mussels

    1 cup dry White Wine

    4 cups Fish Stock

    3 Carrots diced

    1 Onion diced

    3 Celery stalks diced

    4 Garlic Cloves minced

    5 Russet Potatoes peeled and medium diced

    ½ quart Heavy Cream

    In a medium saucepan bring the wine and fish stock to a boil, add the mussels and cook for five minutes or until the mussels open. Remove the mussels and reserve the liquid.

    In a separate pot combine the potatoes and heavy cream and bring to a simmer, cook until the potatoes are cooked through.

    In another pot sauté the onion, garlic, celery and carrot until translucent. Add the reserved mussel broth and reduce by half.

    Add the heavy cream and potatoes to the broth and reduce by half again.

    Season with salt & pepper and keep warm.

    In a shallow sauté pan add a pat of butter, add the cod and cover with the parsley and bread crumb mixture and bake in a pre-heated 375 degree oven until the cod is flaky, about 15-20 minutes.

    To serve warm a portion of the stew in a bowl, add a piece of fish and finish with a drizzle of good olive oil.
