Guests will begin with a reception featuring canapés and curated beverages, followed by a multi-course tasting menu with beverage pairings in COAST Dining Room—a true celebration of exceptional cuisine.

François-Emmanuel Nicol trained in several of Quebec City’s most renowned restaurants, including the late Panache. In 2015, he ranked among the Canadian Top 10 at the San Pellegrino Young Chef Competition, and the following year earned the Grand Chef Relais & Châteaux Scholarship, leading him to train at Quay in Australia, Arzak in Spain, and Mirazur in France. Returning home, he became sous-chef at Restaurant Légende before stepping into the role of Chef in 2018. Today, his restaurant Tanière proudly belongs to the Relais & Châteaux family and, in 2025, was awarded two Michelin stars, confirming its place among Canada’s finest dining destinations.
